Cat’s Ears with Pearls Pasta

Most tasty pasta and easy to boot. Name came from shape of the pasta which holds sauce well along with the peas which reminded me of pearl earrings.

Ingredients

1 onion sliced and diced
1 small carrot sliced and diced
olive oil
bunch of mushroom
1/2 lb of campanelle pasta
1/2 jar of marinara
splash of fish sauce
splash of chili garlic sauce
handful of frozen peas
good pour of red wine
parmessian cheese
splash of cream
salt and pepper

Preparation

This one comes together quite nicely.

Get water boiling for the pasta.

Saute onions in olive oil for a few minutes, then add carrots. After a few minutes add mushrooms. Add a bit of salt and pepper — not too much cause the fish sauce and chili garlic sauce are salty and hot too.

Let vegies cook for a couple of minutes and then add the marinara sauce. Not too much, but enough.

Cook pasta for 10 minutes or per instructions on box.

Back to the sauce. Toss in some peas, add a nice splash of red wine, a bit of fish sauce and chili garlic sauce. Simmer.

Before serving add a handful of parmessian cheese and wee bit of half and half.

After the pasta is cooked al dente, then put pasta into the sauce and mix till well distributed.

Serve in large platter and sprinkle parmessian cheese on top.

Enjoy with remainder of red wine. Serving suggestion caesar salad
